While this generous tuber has gained fame thanks to the Cubans, its origin dates back to the East, to Japan and China (the latter with more than 70% of its worldwide production), where this food was brought hundreds of years ago to expand in American lands, and its application is not only limited to the kitchen, it can also be included as a medicinal alternative.

A particular story

In the United States, its story is quite particular, around the 1930s, a very sweet orange-fleshed sweet potato was introduced as a 'yam' in the state of Louisiana (USA).

A marketing strategy that sought to distinguish it from a similar, but firmer variety, grown in the northeastern part of the North American country.

The orange variety was in no way a true yam.

In America

In Central America, where this species of potato originated, it could be called a sweet potato. The Cubans called it boniato because the words mean "sweet and harmless" as opposed to hot or spicy.

It may be harmless but it is also very good... and less sweet than our sweet potato. Its flavor is similar to that of a chestnut.

Sweet potatoes are not as sweet and moist as other sweet potatoes, but many people prefer their fluffier consistency and more delicate flavor.
