Cuban Creole Sofrito
Ingredients
3 Tomatoes
180 milliliters of Tomato paste
1 Large onion
1 Large garlic
2 Garlic cloves
½ cup of Chopped leeks
Olive oil
Bay leaves
1 pinch of Pepper
1 pinch of Salt
Preparation
Step 1 : To prepare this recipe, start by finely chopping the onion, tomato, and pepper.
Step 2 : The garlic should be crushed in a mortar to enhance its flavor.
Step 3 : Next, heat the oil in a skillet and brown the garlic.
Step 4 : Then, add the onion, pepper, and leek, cooking until the onion becomes transparent.
Step 5 : Afterwards, add the tomato cubes and tomato paste, stirring for about a minute until it boils.
