Rabbit pie

Rabbit Pie is a delicious Cuban tradition. Debone, chop and mix with brandy, wine and spices. Cook in a crust, with bacon strips and fillets, decorate with jelly and jam.

When preparing the Rabbit Pie, bone the rabbits to separate the fillets and remove the skin and bacon. Then beat the eggs, prepare the jelly and soak the bread crumbs in milk.

Next, grind the meat with soaked bread and knead with brandy, wine, pepper and salt. The dough will be rolled out in a mold, filled with the minced meat, bacon and fillets, then baked and garnished with jelly, jam or potato salad and tartar sauce when serving.

Ingredients

650 grams of Crust

120 grams of Bacon

350 grams of Rabbit fillet

1 ½ kilogram of Ground rabbit meat

30 grams of Plain gelatin

15 milliliters of Brandy

15 milliliters of Sherry wine

1 pinch of Ground pepper

White bread crumbs

180 milliliters of Milk

60 grams of Flour for sprinkling

30 grams of Egg wash

60 grams of Gelatin

60 grams of Jam

Lettuce leaves

1 pinch of Salt

Preparation

Step 1 : To prepare this exquisite rabbit pie, start by boning the rabbits and separating the fillets, removing the bacon skin and cutting it into 1 cm thick strips.

Step 2 : Then beat the eggs and make a liquid jelly, soaking bread crumbs in milk.

Step 3 : Next, grind the meat with the soaked bread in a meat grinder with a medium disc and beat or knead the filling well, adding brandy, wine, ground pepper and salt.

Step 4 : Prepare the crust and line a pudding mold with it.

Step 5 : Fill the mold halfway with the filling, place the bacon strips and rabbit fillets, add the rest of the filling, and cover with the remaining crust.

Step 6 : Poke the crust, brush with beaten egg, and bake at a regular temperature for 1 ½ hours at 200ºC.

Step 7 : Once out of the oven, make incisions at the ends of the pie to drain the cooking liquid and pour the liquid jelly through the holes.

Step 8 : Then let it cool and store in the refrigerator.

Step 9 : To serve, decorate the pie with lettuce leaves and garnish with jelly and jam or a potato salad and tartar sauce.
