Cuban Rice Pudding
Ingredients
¾ cup of Long grain rice
2 cups of Water
¼ Lemon peel
2 Cinnamon sticks
1 can of Evaporated milk
1 can of Sweetened condensed milk
1 teaspoon of Vanilla extract
¼ teaspoon of Salt
Preparation
Step 1 : In a pot, boil the rice with water over medium heat, along with the lemon peel and cinnamon for a few minutes.
Step 2 : Reduce the heat and cover the pot.
Step 3 : Cook on low heat for 10 minutes or until the rice is soft.
Step 4 : Remove the lemon peel.
Step 5 : Add the evaporated milk and condensed milk to the same pot.
Step 6 : Cook over low heat while stirring constantly to prevent the rice from sticking.
Step 7 : Add the salt and vanilla, and stir.
Step 8 : Continue stirring for 10 minutes until the mixture thickens or reaches the desired consistency.
Step 9 : Remove the pot from the heat, let it cool, and refrigerate.
