Ingredients

2 pounds of Sweet potatoes

2 cups of Water

½ teaspoon of Salt

2 Pieces of lemon peel

2 Pieces of cinnamon stick

2 pounds of Sugar

1 teaspoon of Vanilla

4 tablespoons of Flour

Preparation

Step 1 : Sweet potatoes should be carefully washed and the dirt and part of the skin removed.

Step 2 : Then, they are cooked in a pressure cooker with water, salt, lemon or orange peel, and cinnamon for 15 minutes.

Step 3 : Afterwards, they are allowed to cool before peeling and mashing them.

Step 4 : Once the necessary amount of sweet potato puree is obtained, the same amount of white sugar, salt, lemon or orange peel, and cinnamon is added.

Step 5 : In a thick saucepan, the sweet potato puree is cooked with sugar, stirring constantly until a homogeneous mixture is achieved.

Step 6 : This process can take around half an hour, stirring the sweet until it becomes thick and detaches from the sides of the pot.

Step 7 : Vanilla is added and the boniatillo is poured onto a floured board, sprinkled with wheat flour.

Step 8 : It is left to air dry until the surface is cracked and hard.
