Panquecitos
Ingredients
½ cup of Butter
5 Eggs
1 ½ cup of White sugar
1 ⅓ cup of Flour
1 teaspoon of Baking powder
1 teaspoon of Lemon zest
1 tablespoon of Aged rum
Preparation
Step 1 : To prepare the panquecitos, start by melting the butter and letting it cool to room temperature.
Step 2 : Preheat the oven to 350°F and grease the panquecitos molds with butter.
Step 3 : Next, separate the egg whites from the yolks and beat the yolks with sugar gradually until thick.
Step 4 : Add the melted butter, then the beaten egg whites until stiff peaks form, and finally the sifted flour with baking powder.
Step 5 : Gently fold everything together, without overmixing.
Step 6 : Incorporate the lemon zest and rum into the mixture, then pour it into the molds filling them only up to 2/3 full.
Step 7 : Bake for approximately 25 minutes and let them cool.
Step 8 : To serve, it is recommended to sprinkle the panquecitos with sugar.
