Yemas a la cubana
Ingredients
7 Egg yolks
2 Egg whites
2 tablespoons of Cornstarch
½ teaspoon of Baking powder
2 cups of Sugar
1 cup of Water
1 Cinnamon stick
Candied mangos
1 cup of Whipped cream
Preparation
Step 1 : To prepare this recipe, first blend the mango in a blender to obtain a pulp.
Step 2 : Then, vigorously beat the egg yolks.
Step 3 : Next, beat the egg whites until stiff peaks form and then fold them into the beaten yolks.
Step 4 : Then, mix the cornstarch with the baking powder and add this mixture by gently folding from top to bottom in a circular motion.
Step 5 : Pour the mixture into a greased flat mold and bake in a moderate oven for 30 minutes.
Step 6 : Once cooked, remove from the mold and cut into small squares.
Step 7 : Then, prepare a syrup with water and cinnamon and place the yolk squares in the syrup.
Step 8 : To finish, mix the blended candied mango with the whipped cream and place the yolk squares in this mixture.
