Ajiaco con tasajo
Ingredients
1 pound of Salted meat
Root vegetables (yucca, pumpkin, plantain, sweet potato, etc)
6 Garlic cloves
1 Onion
Chili pepper
2 tablespoons of Tomato puree or bija
Pepper
1 tablespoon of Oil
Oregano
Cumin
Bay leaf
Preparation
Step 1 : The meat is placed in hot water to remove some of the salt, then cut into pieces.
Step 2 : The meat is tenderized in a pot.
Step 3 : Peel the root vegetables and cut them into small pieces, then add them to the tenderized meat and cover with water.
Step 4 : Bring to a boil without softening too much.
Step 5 : In a skillet, mix garlic, onion, chili pepper, oregano, and bay leaf with tomato puree and oil, sauté them and add them to the pot with the root vegetables and meat.
Step 6 : Let it boil for five minutes, turn off the heat, and add cumin and pepper to taste.
Step 7 : Finally, cover and let it rest for five minutes before serving.
