Ingredients

1 ½ cup of Fish fillets

3 tablespoons of Vinegar or lemon juice

1 teaspoon of Salt

½ teaspoon of Ground pepper

¼ teaspoon of Bay leaf or oregano

3 Cloves

2 cups of Rice

4 teaspoons of Oil

3 Garlic cloves

1 tablespoon of Tomato sauce

3 tablespoons of Rum

4 cups of Fish broth

½ teaspoon of Annatto

1 tablespoon of Salt

½ teaspoon of Cumin

Preparation

Step 1 : The fish is marinated with vinegar or lemon juice, salt, pepper, cumin, bay leaf, oregano, and crushed cloves, letting it marinate for half an hour.

Step 2 : On the other hand, the rice is soaked in a little fish broth also for half an hour.

Step 3 : In a hot skillet with oil, crushed garlic cloves and chopped onion are sautéed.

Step 4 : Then add tomato sauce and the fish with its marinade, cooking for 2 to 3 minutes.

Step 5 : Rum, broth, salt, and annatto are added to the mixture.

Step 6 : Once it starts to boil, adjust the salt level and add the soaked rice.

Step 7 : Cover the skillet and cook over moderate heat for about half an hour.

Step 8 : When the rice is tender, reduce the heat and let it cook over low heat for an additional 15 minutes.
