Ingredients

2 pounds of Rice

1 pound of Red beans

1 Pepper

1 Onion

3 Garlic cloves

1 teaspoon of Salt

1 teaspoon of Sugar

¼ teaspoon of Cumin

¼ teaspoon of Oregano

½ pound of Pork trimmings

½ pound of Pork shoulder or similar

2 teaspoons of Lard

6 cups of Water

Preparation

Step 1 : The beans should be washed and soaked in water with a pepper and a crushed garlic clove from the night before or at least a few hours in advance.

Step 2 : Then, cook them in the same soaking water until they are tender.

Step 3 : Next, separate the water from the beans and measure one liter of water, supplementing if necessary.

Step 4 : In a skillet, sauté the pork trimmings until they release the fat, adding the cumin, oregano, finely chopped onion, pepper, and garlic.

Step 5 : Add the beans, bean water, salt, and sugar.

Step 6 : Once it starts boiling, add the previously washed rice and cook over medium heat with the pot well covered until ready.

Step 7 : To serve, sauté the pork shoulder in small pieces in two tablespoons of lard until golden brown, then add the crushed garlic and lightly brown.

Step 8 : This mixture is poured over the congrí and stirred well with a fork before serving.
