Preparation

Step 1 : To prepare this delicious recipe, start by preheating the oven to 350 degrees Fahrenheit and greasing a rectangular baking dish with a light layer of cooking spray or oil.

Step 2 : Once the dish is prepared, separate all bone-in chicken pieces and some of the other rice pieces.

Step 3 : It is important to shred the chicken and place it in a separate bowl, making sure to discard any bones or skin from the chicken pieces.

Step 4 : Then, spread half of the rice in the baking dish, forming a layer about 5 centimeters thick.

Step 5 : Next, scatter the shredded chicken over the rice to create another layer, and cover with the remaining rice.

Step 6 : After that, cover the preparation with a thin layer of mayonnaise, sprinkle a generous amount of grated cheese, and place a slice of red bell pepper on top.

Step 7 : Bake the preparation for 18 to 20 minutes, or until the cheese starts to melt.

Step 8 : To finish, broil for an additional 2 to 4 minutes until the top is golden and bubbly.

Step 9 : Before serving, sprinkle with parsley, garnish with olives, and serve hot straight from the oven.
