Codfish a la Cubana
Ingredients
1 ½ pound of Codfish
2 Onions
2 Garlic cloves
3 Red peppers
Parsley
Saffron
1 liter of Fish stock
500 grams of Potatoes
Oil
1 pinch of Pepper
1 pinch of Salt
Bread crumbs or wheat flour
Preparation
Step 1 : The codfish must be desalted, carefully washed, deboned, and skinned.
Step 2 : Then, cut into large pieces and placed in a pot.
Step 3 : In a second pot, prepare a flavorful sauce with oil, chopped onion, mashed garlic, sliced peppers, and parsley.
Step 4 : Once well sautéed, add the sauce to the codfish along with enough fish stock to cover it.
Step 5 : Season with salt and pepper, then add the potatoes in chunks.
