Black Beans Cuban-Style
Ingredients
1 pound of Black beans
3 Garlic cloves
1 Bay leaf
2 Cubanelle peppers, half of a large one
1 Onion
1 teaspoon of Sugar
Oregano
1 tablespoon of Vinegar
1 tablespoon of Oil
1 pinch of Salt
Preparation
Step 1 : Soak the beans in water with crushed garlic, bay leaf, Cubanelle peppers, halved and cleaned, and onion chopped into pieces.
Step 2 : After soaking for about an hour, cook them until very soft, add salt and a teaspoon of sugar.
Step 3 : In a separate pan, prepare a sofrito with oil, half of the onion, the other half of the halved and cleaned Cubanelle pepper, and a bit of oregano.
Step 4 : When half-sautéed, add a ladle of beans, stir to coat them in the mojo, then incorporate into the rest of the pot.
Step 5 : Slightly mash the beans with the ladle to thicken.
Step 6 : If desired, once the beans are off the heat, you can add a tablespoon of vinegar and one of oil.
