Ingredients

3 kilograms of Pork leg

1 Bulb of garlic, its cloves crushed

1 tablespoon of Oregano

2 teaspoons of Cumin

½ teaspoon of Pepper

2 tablespoons of Salt

¾ cup of Sour orange juice

500 grams of Onion, sliced

Preparation

Step 1 : To prepare the leg, it must be cleaned and placed on a baking dish.

Step 2 : Then, pierce the leg several times in different parts with the tip of a sharp knife.

Step 3 : Next, mix the crushed garlic with oregano, cumin, pepper, salt, and orange juice to create a paste.

Step 4 : Subsequently, spread this paste over the entire leg and place the onion slices on top.

Step 5 : To marinate, cover the leg and let it rest in the refrigerator for approximately 10 hours.

Step 6 : Once the resting time has elapsed, remove the leg from the refrigerator and let it rest at room temperature for 30 minutes.

Step 7 : Then, preheat the oven to 165 °C (325 °F) and bake the leg, covered with aluminum foil, for 4 hours or until it reaches an internal temperature of 85 °C (185 °F).
