Cuban-Style Chicken Stew
Ingredients
1 Whole chicken, cut into pieces and skin removed
½ cup of Fresh orange juice
½ cup of Fresh lime juice
3 Cloves of garlic, minced
¼ cup of Olive oil
1 White onion, chopped
1 Green bell pepper, chopped
½ cup of Dry white wine
1 can of Tomato sauce
Chicken-flavored broth
3 Potatoes, peeled and cut into small pieces
½ cup of Green olives stuffed with red peppers
¼ cup of Raisins
2 tablespoons of Capers
Preparation
Step 1 : Cut the chicken into pieces and marinate in a large bowl with orange juice, lime juice, and garlic for 30 minutes.
Step 2 : Then, remove the chicken from the marinade and set aside the marinade.
Step 3 : Pat the chicken dry gently.
Step 4 : In a large non-stick pot, heat olive oil over medium-high heat and cook the chicken in batches, turning once, until browned, about 10 minutes.
Step 5 : Place the chicken on a tray and set aside.
Step 6 : In the same pot, add onion and bell peppers and cook over medium heat, stirring occasionally, until the vegetables soften, about 7 minutes.
Step 7 : Add wine and cook for 2 minutes.
Step 8 : Then add the tomato sauce and chicken-flavored broth.
Step 9 : Put the chicken back into the pot along with the reserved marinade, potatoes, olives, raisins, and capers.
Step 10 : Simmer covered, stirring occasionally, until the chicken is well cooked, about 45 minutes.
