Fish Enchilado
Ingredients
500 grams of White fish
3 Spicy chilies
2 teaspoons of Grated ginger
2 Tomatoes
4 Garlic cloves
5 Basil leaves
½ teaspoon of Dried parsley
3 tablespoons of Lemon juice
3 tablespoons of Oil
½ cup of Tomato sauce
½ Onion
½ Sweet pepper
½ cup of Flour
Oil for frying
1 pinch of Salt
Preparation
Step 1 : The fish is washed and drained, seasoned with salt and pepper, and lemon juice is added. Then it is left to marinate in this mixture.
Step 2 : The onion and chilies are sliced into julienne strips, and the tomatoes are cut into small cubes.
Step 3 : In a mortar, place the garlic, parsley, and basil leaves. Mash and reserve.
Step 4 : In a plastic bag or covered container, place the flour and add the reserved fish. Gently shake to coat with flour.
Step 5 : Remove excess flour and fry the fish in hot oil for 2 minutes, browning on all sides.
Step 6 : In a pot, heat 3 tablespoons of oil over low heat. Add the mashed garlic and basil to lightly brown.
Step 7 : Once the garlic is golden, add the onion, tomatoes, peppers, and ginger. Mix well.
Step 8 : Cook the sauce over low heat for 5 minutes without adding sugar, thanks to the natural sweetness of the red onion.
Step 9 : Add the lightly fried fish pieces to the pot. Cover with the sauce and simmer over low heat for 3 minutes without stirring to prevent breaking the fish.
Step 10 : Turn off the heat and let it rest covered for about 10 minutes.
Step 11 : Serve the Fish Enchilado with white rice, suggesting to enjoy the remaining sauce spread on bread, toast, or crackers.
Step 12 : This balanced and tasty dish can be accompanied by a cold beer or white wine for a complete gastronomic experience.
