180 grams of Pork products
110 grams of Onion or scallion
110 milliliters of Dry wine
150 grams of Other pork products
50 grams of Bread
1 Egg
110 grams of Bacon
50 grams of Carrot
30 milliliters of Milk
1 teaspoon of Lemon juice
Ground pepper
1 pinch of Salt
500 grams of Mashed potatoes
Preparation
Step 1 : To prepare this dish, it is important to follow the steps below.
Step 2 : First, select the chickens and debone them, opening them so they can be seasoned with salt, pepper, lemon juice, dry wine, and red wine.
Step 3 : Next, peel the onion and finely chop it, then sauté until golden without burning.
Step 4 : It is also necessary to remove the crust from the bread and soak it in cow's milk, squeezing it out in a clean cloth and having it ready for later use.
Step 5 : Additionally, prepare a mashed potato and have the pork products, eggs, and the remaining red wine from the marinade ready.
Step 6 : For the filling, grind the pork products and add the bread and egg, forming a dough with a cylindrical shape to stuff the deboned chickens and roll them up.
Step 7 : Once prepared, place them on a baking pan previously lined with cucumber slices or wheels to prevent sticking, and bake in the oven at 80°C for 40 minutes, adding chicken broth during cooking.
Step 8 : When serving, infuse the chicken with flavor and turn off the oven. Present it on a roasting platter, garnished with red peppers and accompanied by mashed potatoes.
