Mofongo with Chicken and Creole Sauce
Ingredients
1 Green plantain
Oil for frying
1 Chicken breast cut into cubes
1 Chopped tomato
½ cup of Chopped pepper
⅓ cup of Chopped onion
1 tablespoon of Tomato paste
⅓ cup of Chicken broth
1 teaspoon of Butter
1 cup of Pork cracklings
1 Crushed garlic clove
Salt and cilantro
Preparation
Step 1 : The plantain should be peeled and cut into thick slices.
Step 2 : Next, heat the oil to fry the pieces, ensuring they soften.
Step 3 : Once ready, remove from heat and drain on paper towels.
Step 4 : Meanwhile, sauté the chicken breast and season to taste.
Step 5 : Then, prepare a sofrito with the tomato, pepper, onion, and tomato paste.
Step 6 : Add this sofrito to the chicken pieces along with the broth.
Step 7 : In a mortar, place some butter followed by part of the fried plantains, pork cracklings, and garlic.
Step 8 : Blend everything until it forms a smooth dough.
Step 9 : To serve, place the mofongo on a plate and center the chicken sofrito.
