Moros con cristianos
Ingredients
300 grams of Rice
80 grams of Black beans
450 milliliters of Water
25 grams of Smoked bacon
12 grams of Salt
35 grams of Onion
50 milliliters of Oil
20 grams of Chili peppers
1 pinch of Ground oregano
1 Bay leaf
5 grams of Garlic
1 pinch of Ground cumin
Preparation
Step 1 : The beans are selected and washed before being soaked with the indicated amount of water for approximately 10 to 12 hours, refrigerated.
Step 2 : Then, they are softened over moderate heat with the same soaking water.
Step 3 : Meanwhile, the bacon, onion, and chili peppers are chopped into a jardinière, while the garlic is finely minced.
Step 4 : In a suitable container, heat the oil and sauté the bacon, garlic, onion, and chili pepper.
Step 5 : Add the oregano, cumin, and bay leaf, then incorporate the softened beans along with the cooking broth, seasoning with salt to taste.
Step 6 : Separately, select and wash the rice, which is added to the pot once the mixture begins to boil, stirring for even distribution.
Step 7 : Once it boils again, place the preparation in the oven for about 20 minutes.
Step 8 : After removing from the oven, turn over to prevent further cooking.
