Ingredients

1 ½ kilogram of Chicken

4 tablespoons of Sour orange juice

80 grams of Bacon

80 grams of Onion

½ cup of Carrot

4 tablespoons of Oil

½ cup of Chard

1 cup of Tomato

1 cup of Potato

40 grams of Raisins

1 teaspoon of Basil

1 pinch of Ginger

1 pinch of Nutmeg

4 tablespoons of Rum

500 milliliters of Chicken broth

2 teaspoons of Chopped parsley

1 cup of Bread crumbs

1 pinch of Salt

1 pinch of White pepper

Preparation

Step 1 : To prepare this delicious dish, start by cleaning the chicken and cutting it into quarters.

Step 2 : Then, season it with salt, pepper, and sour orange juice and let it rest in the refrigerator for 2 hours.

Step 3 : Meanwhile, cut the bacon into cubes and the onion into slices.

Step 4 : Prepare the additional ingredients, including carrot, chard, tomato, potato, raisins, basil, ginger, and nutmeg.

Step 5 : In a pot, brown the chicken until golden on all sides and then remove it and set it aside.

Step 6 : In the same pot, sauté the bacon, onion, and carrot.

Step 7 : Add the tomato, parsley, raisins, and the reserved chicken.

Step 8 : Let it cook for a while and then pour in the broth.

Step 9 : Add the potatoes, basil, ginger, and nutmeg and simmer for 20 minutes covered.

Step 10 : Add the chard and cook for a few more minutes.

Step 11 : Once ready, serve the stew on a platter over slices of fried bread and garnish with mint or basil to taste.
