Ingredients

5 Eggs

2 Potatoes

1 Onion

400 milliliters of Olive oil

1 pinch of Salt

1 Parsley leaf

Preparation

Step 1 : Wash and peel the potatoes, then cut them in half and into thin half-moon slices of about half a centimeter.

Step 2 : Soak them in salted water while chopping the onion into medium dice.

Step 3 : In a large pan with oil over medium heat, add the soaked potatoes and onion.

Step 4 : Cook over low heat for about 25 minutes.

Step 5 : In a deep bowl, beat the eggs and add salt to taste, along with the potatoes and onion.

Step 6 : Mix well.

Step 7 : In another pan with a little oil over medium heat, pour the mixture and let it cook slowly.

Step 8 : When the omelette begins to form, carefully separate the edges and flip it with a large plate to cook on the other side.

Step 9 : The omelette can have different degrees of doneness, from more or less dry.

Step 10 : The ideal point is when the ingredients are compact but still juicy.
