Rice with codfish

Ingredients

½ kilogram of Codfish

½ cup of Olive oil

1 Onion

1 Green bell pepper

½ cup of Chopped parsley

6 Cloves of garlic

¾ cup of Tomato sauce

1 Bay leaf

½ liter of Water

¼ liter of White wine

½ kilogram of Long grain rice

Preparation

Step 1 : The codfish is soaked in water for a couple of hours to cover it.

Step 2 : Then, it is shredded into large pieces and sautéed in hot oil.

Step 3 : Next, the onion, bell pepper, parsley, and peeled garlic cloves are ground and added to the codfish along with the chopped tomato (if using fresh tomatoes, these should be chopped into small, seedless pieces).

Step 4 : Wine is added and allowed to boil for 2 to 3 minutes.

Step 5 : Subsequently, 2 cups of the water in which the codfish was soaked are added; once it starts boiling, the previously cleaned and washed rice, if necessary, is added.

Step 6 : It is cooked covered over medium heat until the grain opens and the rice starts to dry out.

Step 7 : Then reduce the heat and cook for 5 to 10 minutes on low heat with the pot covered.
