Ingredients

1 ½ kilogram of Roast beef

1 Onion

1 Pepper

2 Garlic cloves

¼ teaspoon of Ground pepper

1 Bitter orange

6 Prunes

150 grams of Ham

2 Bacon strips

1 Garlic clove

1 teaspoon of Salt

½ cup of Dry wine

4 Sweet oranges

Preparation

Step 1 : Clean the meat and pierce it in several places, place prunes wrapped in ham in each hole.

Step 2 : Marinate the meat with crushed garlic, pepper, and bitter orange, cover with onion and pepper slices, let marinate for at least 3 hours.

Step 3 : Sauté the bacon strips, brown the meat in the fat, add dry wine and orange juice.

Step 4 : Cook covered until tender, adding orange juice as needed to prevent sticking.
