Ingredients

2 pounds of Pork meat

2 tablespoons of Bitter orange juice

4 Garlic cloves

1 Carrot

1 Onion

1 Leek

4 tablespoons of Vegetable oil

1 pinch of Salt

Oregano

Preparation

Step 1 : To prepare this recipe, it is important to start by cleaning the pork meat and seasoning it with salt and a part of the marinade made with bitter orange juice, garlic, and toasted oregano.

Step 2 : Next, the meat should be rolled into a log and tied with twine.

Step 3 : Then, the julienned vegetables should be placed in a baking dish and the meat roll positioned on top of them.

Step 4 : Pour the remaining marinade over the meat and let it marinate for an hour.

Step 5 : After this time, cook in a preheated oven at 190°C for approximately 1.5 hours.
