Ropa vieja a la cubana
Ingredients
500 grams of Shredded beef skirt
1 Sliced onion
½ Sliced red bell pepper
½ Sliced green bell pepper
½ Sliced yellow bell pepper
4 Cloves of garlic
½ cup of Beef broth
1 tablespoon of Lard
2 Bay leaves
1 cup of Tomato sauce
2 tablespoons of Oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The broth is prepared with a piece of beef skirt and cooked until the meat can be shredded.
Step 2 : Then, the meat and ½ cup of broth are removed, reserving the remaining broth.
Step 3 : A sofrito is prepared with oil, garlic, onion, peppers, and tomato puree.
Step 4 : Add the shredded meat and broth, and cook covered to absorb the flavors.
Step 5 : Adjust salt and pepper, reduce the sauce to taste, and serve with rice and fried plantains.
