Cuban-style Ropa Vieja
Ingredients
500 grams of Shredded beef flank steak
1 Julienned onion
½ Julienned red bell pepper
½ Julienned green bell pepper
½ Julienned yellow bell pepper
4 Garlic cloves
½ cup of Beef broth
1 tablespoon of Pork lard
2 Bay leaves
1 cup of Tomato sauce
2 tablespoons of Oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The broth is prepared with a piece of flank steak and cooked until the meat can be shredded.
Step 2 : Then, the meat and ½ cup of broth are removed, reserving the remaining broth.
Step 3 : A sofrito is prepared with oil, garlic, onion, peppers, and tomato purée.
Step 4 : The shredded meat and broth are added, and cooked covered to allow the flavors to absorb.
Step 5 : Salt and pepper are adjusted, the sauce is reduced to taste, and served with rice and fried plantains.
