Ingredients

1 Chicken

1 Lemon

5 Garlic cloves

2 cups of Moros y Cristianos rice

½ Onion

5 tablespoons of Oil

4 Potatoes

½ Onion

½ Green pepper

1 pinch of Salt

1 pinch of Oregano

1 pinch of Pepper

Preparation

Step 1 : The first step to prepare this delicious recipe is to wash and clean the chicken.

Step 2 : Next, season with oregano and cumin, and add lemon and crushed garlic.

Step 3 : It is important to let the chicken rest for 2 hours so the flavors can meld perfectly.

Step 4 : While the chicken rests, prepare the Moros y Cristianos rice and set aside 2 cups to stuff the chicken later.

Step 5 : Additionally, place the potatoes on a baking tray with oil, onion, and pepper, and season with salt and pepper to taste.

Step 6 : Then, bake in a preheated oven at 180°C.

Step 7 : Once the chicken has rested sufficiently, stuff it with onion and the reserved rice, and secure with toothpicks to prevent the filling from escaping.

Step 8 : Bake the chicken at 180°C for approximately 60 minutes, until it is perfectly cooked.

Step 9 : To serve, place the chicken over the freshly baked potatoes, drizzle with a little olive oil, and add aromatic herbs for an extra flavor touch.
