In a large pot, cook the beans with onion, garlic, and vegetable broth until tender.
Then add fresh spinach and cook until wilted.
Finally, blend the mixture until smooth and tasty.
Black Bean and Spinach Cream
Ingredients
2 cups of Black bean
1 Bunch of spinach
2 Malangas
6 Aji peppers
4 tablespoons of Chives
4 Garlic cloves
2 Sprigs of marjoram
4 Ground oregano leaves
½ cup of Toasted peanuts
1 tablespoon of Oil
3 liters of Water
Preparation
Step 1 : To prepare this recipe, first cook the beans in the soaking water along with the malangas until very soft.
Step 2 : Meanwhile, in a pan with hot oil, sauté the chives, garlic cloves, aji peppers, and seasoning plants along with the spinach.
Step 3 : Once the sofrito is ready, add it to the pot where the beans and malangas are, adding salt to taste and cooking for about five minutes.
Step 4 : Then, make a thick puree with all the ingredients in a blender, adjusting the amount of water according to whether you want the cream thicker or thinner.
Step 5 : Finally, to give it the finishing touch, add the toasted peanuts to the mixture.
