Ingredients

2 tablespoons of Vegetable oil

1 Large onion, chopped

3 Cloves of garlic, finely chopped

2 ½ cups of Dry black beans

1 cup of Cooked ham, finely chopped

3 cups of Beef broth

3 cups of Water

1 ½ teaspoon of Ground cumin

1 ½ teaspoon of Dried oregano leaves

1 Medium green bell pepper, chopped

1 Large tomato, chopped

Hard-boiled eggs, chopped

Chopped onions

Preparation

Step 1 : In a 12-quart pot, heat oil over medium heat.

Step 2 : Sauté 1 cup chopped onion and garlic in oil for 4 to 6 minutes, stirring occasionally, until onion is soft.

Step 3 : Then add remaining ingredients, except for eggs and additional chopped onions, and heat until boiling.

Step 4 : Boil for 2 minutes and reduce heat.

Step 5 : Cover pot and simmer gently for about 2 hours or until beans are tender.

Step 6 : Finally, serve the soup topped with eggs and onions, if desired.
