Criolla-style Chicken Broth
Ingredients
2 liters of Broth
2 Chicken pieces
1 pound of Potato
½ cup of Noodle
1 Onion
1 Garlic clove
6 Tomatoes
3 Peppers
Parsley
Pinch of turmeric, saffron, oregano, and cumin
1 pinch of Salt
Preparation
Step 1 : In a pot with enough water, place the chicken and let it cook until obtaining a broth.
Step 2 : On the other hand, prepare a sauce in oil with a crushed garlic clove, onion, tomatoes, peppers, and parsley, all finely chopped.
Step 3 : Add two ladles of broth to the sauce and let it boil.
Step 4 : Then add saffron, toasted oregano, and a pinch of crushed cumin.
Step 5 : Strain the sauce and mix it with the previously prepared broth.
Step 6 : Add the potatoes in pieces and the noodles, cooking until soft.
