Cuban Black Bean Soup
Ingredients
2 tablespoons of Vegetable oil
1 Large onion, chopped
3 Cloves of garlic, finely chopped
2 ½ cups of Dried black beans
1 cup of Cooked ham, finely chopped
3 cups of Beef broth
3 cups of Water
1 ½ teaspoon of Ground cumin
1 ½ teaspoon of Dried oregano leaves
1 Medium green bell pepper, chopped
1 Large tomato, chopped
Hard-boiled eggs, chopped
Chopped onions
Preparation
Step 1 : In a 12-liter pot, heat the oil over medium heat.
Step 2 : Fry a cup of chopped onion and garlic in the oil for 4 to 6 minutes, stirring occasionally, until the onion is soft.
Step 3 : Add the remaining ingredients, except for the eggs and additional chopped onions; heat until boiling.
Step 4 : The mixture boils for 2 minutes and then the heat is reduced.
Step 5 : Cover the pot and cook over low heat for about 2 hours or until the beans are soft.
Step 6 : Finally, the soup is served topped with eggs and onions, if desired.
