Ingredients

2 Large fish heads

2 tablespoons of Oil

1 Chili

3 Peppercorns

3 Garlic cloves

2.5 liters of Water

¼ pound of Chopped bread

1 Onion

6 Cooking tomatoes

1 teaspoon of Cumin

1 pinch of Salt

Preparation

Step 1 : In the same pot where the soup will be made, pour the oil and heat it.

Step 2 : Then, prepare a sofrito with onion and chili, and add the chopped tomatoes, letting them cook until done.

Step 3 : Next, add the peppercorns, cumin, and crushed garlic cloves, stir well, and add the fish heads to the sofrito.

Step 4 : Add the water and cook over low heat until it reduces by half.

Step 5 : Then, strain the broth, remove the fish heads, and separate the fish pieces.

Step 6 : On the side, boil the broth again with the bread crumbs until it thickens, stirring occasionally.

Step 7 : Add the fish morsels and chopped parsley.

Step 8 : This recipe can also be made with soaked rice instead of bread, using one tablespoon of rice for each cup of broth.
