350 grams of Octopus
100 grams of Tomato sauce
1 Onion
2 Garlic cloves
Mild olive oil
1 liter of Water or fish broth
2 Eggs
Parsley
1 pinch of Pepper
Sliced bread
1 pinch of Salt
Preparation
Step 1 : In a pressure cooker, heat a base of olive oil.
Step 2 : Next, add the finely chopped onion and garlic and let them brown.
Step 3 : Then, add the chopped octopus and brown it.
Step 4 : Add the tomato sauce, parsley, and water.
Step 5 : Once all the ingredients are in the pot, close it and turn the heat up to maximum until the working valve starts to rotate.
Step 6 : Subsequently, reduce the heat intensity to the minimum necessary for the weight to turn slowly and evenly, and let it cook for 8 to 10 minutes.
Step 7 : After the time has elapsed, remove the pot and wait for the pressure to release completely before opening it.
Step 8 : Finally, add the eggs and beat them until they set.
