Ingredients

2 cups of Water

1 ½ pound of Tomatoes

2 Onions

1 tablespoon of Butter

5 teaspoons of Sugar

3 teaspoons of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this recipe, start by peeling the potatoes and cooking them in water until soft.

Step 2 : Make sure to keep about 1½ cups of the potato broth.

Step 3 : While the potatoes cook, be sure to wash the tomatoes thoroughly and chop them along with half of the onion.

Step 4 : Cook them for 15 to 20 minutes, stirring occasionally to prevent sticking.

Step 5 : In a skillet with hot oil, sauté the other half of the chopped onion.

Step 6 : Pass the cooked potatoes and the water through a strainer or blender along with the tomatoes.

Step 7 : Add a bit of this mixture to the onion and let cook for about 2 or 3 minutes.

Step 8 : Then, mix everything together and pass through a strainer or blender again.

Step 9 : Season the mixture with salt, sugar, and pepper to taste.

Step 10 : Simmer on low heat for approximately another 30 minutes.

Step 11 : If desired, you can add milk, but it's important to avoid boiling the soup after adding it, as it may curdle.
