Ingredients

500 grams of Ripe tomatoes

2 Medium onions

1 Green bell pepper

1 Celery stalk

2 Garlic cloves

100 milliliters of Sherry wine

125 milliliters of Liquid cream

Mild olive oil

1 pinch of Salt

Black pepper

Fresh basil leaves

Preparation

Step 1 : First, dice the onion, green pepper, celery, and garlic cloves into coarse brunoise.

Step 2 : Next, peel the tomatoes and remove the seeds.

Step 3 : In a pressure cooker, heat a splash of mild olive oil and once hot, add the onion, pepper, garlic, and celery.

Step 4 : Sauté over medium heat.

Step 5 : Then, add the tomato, season with salt and pepper, and cook for about 5 minutes.

Step 6 : Pour in the sherry wine, cook for a few minutes, and then add water or broth.

Step 7 : Close the lid, turn the heat to maximum, and wait for the pressure valve to start whistling.

Step 8 : Reduce the heat to the minimum necessary for the weight to spin slowly and evenly.
