Ingredients

500 grams of Ripe tomatoes

2 Medium onions

1 Green bell pepper

1 Celery stalk

2 Garlic cloves

100 milliliters of Dry sherry wine

125 milliliters of Heavy cream

Gentle olive oil

1 pinch of Salt

Black pepper

Fresh basil leaves

Preparation

Step 1 : Firstly, chop the onion, green bell pepper, celery, and garlic cloves in a rough brunoise.

Step 2 : Then, peel the tomatoes and remove the seeds.

Step 3 : In a pressure cooker, heat a base of gentle olive oil and, once hot, add the onion, bell pepper, garlic, and celery.

Step 4 : Sauté over medium heat.

Step 5 : Next, add the tomato, season with salt and pepper, and let it sauté for about 5 minutes.

Step 6 : Then, pour in the Sherry wine, cook for a few minutes, and add the water or broth.

Step 7 : Close the cooker, increase the heat to the maximum power, and wait for the working valve to start turning.

Step 8 : Then, reduce the heat intensity to the minimum required for the weight to turn slowly and evenly.
